    In a saucepan, combine the diced peaches, brown sugar, apple cider vinegar, chopped onion, grated ginger, cinnamon, red pepper flakes, and salt. Cook over medium heat, stirring occasionally until the mixture thickens, about 20 minutes. Let it cool before serving.

    Preheat your grill or skillet over medium-high heat. Rub the pork chop with olive oil, salt, black pepper, and garlic powder. Grill or sear the pork chop for about 6-8 minutes per side, or until it reaches an internal temperature of 145°F (63°C). Let it rest for 5 minutes.
