Cooking Instructions

  1. 1

    Prepare the Steak

Remove the Wagyu filet from the refrigerator and let it rest at room temperature for about 30 minutes before cooking. This allows for even cooking.

  2. 2

    Season the Steak

Generously season both sides of the filet with kosher salt and freshly ground black pepper.

  3. 3

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

  4. 4

    Sear the Steak

Add the filet to the skillet and sear for about 4-5 minutes on the first side without moving it, until a golden-brown crust forms.

  5. 5

    Flip and Baste

Flip the steak and add the butter and rosemary to the pan. Baste the filet with the melted butter using a spoon. Cook for an additional 4-5 minutes for medium-rare, or longer if desired.

  6. 6

    Rest the Steak

Once cooked to your liking, remove the steak from the pan and transfer it to a cutting board. Tent loosely with foil and let it rest for 5-10 minutes.

  7. 7

    Serve

Slice the filet against the grain and serve immediately, drizzling any pan juices over the top.
