Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. This helps to ensure they become crispy when cooked.

Season the Wings
In a large bowl, toss the chicken wings with salt, black pepper, and paprika. Make sure the wings are evenly coated with the seasoning.
Cooking

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 375°F (190°C). Use a deep-fry thermometer to monitor the temperature.

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil in batches. Fry for about 8-10 minutes or until they are golden brown and cooked through. Remove the wings and let them drain on paper towels.
Saucing

Prepare Hot Sauce
In a small saucepan, melt 1 tablespoon of butter over low heat. Add 1 cup of hot sauce, garlic powder, and cayenne pepper. Stir continuously until the mixture is warmed through.

Toss Wings in Hot Sauce
Place the fried wings in a large bowl and pour the hot sauce over them. Toss until the wings are evenly coated.

Prepare Mild Sauce
In a small saucepan, melt 1 tablespoon of butter over low heat. Add 1 cup of mild hot sauce and stir until combined.

Toss Wings in Mild Sauce
If you prefer mild wings, in a separate bowl, toss the fried wings with the prepared mild sauce until evenly coated.

Serve Plain
For plain wings, serve the fried wings as they are, or with your choice of dipping sauces on the side.
