Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
Mix Ingredients
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Stir until the dough starts to come together.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Pitas
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into a circle about 1/4 inch thick.
Second Rise
Cover the flattened dough circles with a damp cloth and let them rise for another 30 minutes.
Bake the Pitas
Preheat your oven to 475°F (245°C). Place a baking stone or a baking sheet in the oven to heat. Once hot, place the pitas on the stone/sheet and bake for 5-7 minutes until they puff up and are lightly golden.
Cool and Store
Remove the pitas from the oven, cover them with a clean towel to keep warm, and let them cool before serving or storing.
