Method
Crust
- 1
Prepare the oven
Preheat your oven to 350°F (175°C).
- 2
Mix crust ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until the mixture resembles wet sand.
- 3
Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan, creating an even layer.
- 4
Bake the crust
Bake the crust in the preheated oven for about 10 minutes until golden brown. Remove from oven and set aside to cool.
Filling
- 5
Prepare the filling
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- 6
Add sugar
Gradually add the granulated sugar, beating until well combined and smooth.
- 7
Incorporate eggs
Add the eggs one at a time, mixing well after each addition. Be careful not to overmix.
- 8
Add remaining ingredients
Stir in the sour cream, vanilla extract, and flour until just combined.
- 9
Pour filling into crust
Pour the cheesecake filling over the cooled crust in the springform pan.
- 10
Bake the cheesecake
Bake in the oven for 55-60 minutes, or until the center is set but still slightly jiggly.
- 11
Cool the cheesecake
Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
- 12
Chill the cheesecake
Refrigerate the cheesecake for at least 4 hours, preferably overnight, before serving.
