Prepare the Pasta

    Boil the Pasta

    In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt to the water.

    Cook the Manicotti Shells

    Add 12 manicotti shells to the boiling water and cook according to package instructions until al dente. Drain and set aside to cool.

Make the Filling

    Combine Filling Ingredients

    In a mixing bowl, combine 15 oz of ricotta cheese, 1.5 cups of shredded mozzarella, 0.5 cups of grated Parmesan, 1 egg, 2 tablespoons of chopped parsley, 0.5 tsp of salt, and 0.25 tsp of black pepper. Mix until well combined.

    Fill the Manicotti

    Using a piping bag or a spoon, fill each manicotti shell with the cheese filling. Set aside.

Prepare the Sauce

    Cook the Marinara Sauce

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add 2 tablespoons of minced garlic and sauté for about 1 minute until fragrant.

    Add Marinara and Season

    Add 3 cups of marinara sauce, 1 teaspoon of dried oregano, 0.5 tsp of salt, and 0.25 tsp of black pepper to the saucepan. Stir and let simmer for 10 minutes.

Assemble and Bake

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Layer the Dish

    Spread a thin layer of the marinara sauce on the bottom of a baking dish. Arrange the filled manicotti shells on top.

    Top with Sauce and Cheese

    Pour the remaining marinara sauce over the manicotti and sprinkle with any remaining mozzarella cheese.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
