Method

Preparing the Chicken

  1. 1

    Marinate the Chicken

In a medium bowl, combine 2 tablespoons of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper. Add the chicken breasts and ensure they are well coated. Let them marinate for at least 30 minutes in the refrigerator.

  2. 2

    Grill the Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let it rest for 5 minutes before slicing.

Making the Salad

  1. 3

    Prepare the Salad Base

In a large salad bowl, combine 4 cups of chopped romaine lettuce, 1 cup of halved cherry tomatoes, 1 sliced cucumber, and 1 small thinly sliced red onion.

  2. 4

    Add the Chicken

Slice the grilled chicken breasts into strips and add them to the salad bowl.

  3. 5

    Add Feta Cheese

Sprinkle 1 cup of crumbled feta cheese over the salad.

Making the Dressing

  1. 6

    Combine Dressing Ingredients

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, 1 teaspoon of honey, and 1 minced garlic clove. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.

  2. 7

    Dress the Salad

Drizzle the dressing over the salad and toss gently to combine all the ingredients.
