Wash and peel the Russet potatoes. Cut them into long, thin strips, about 1/4 inch thick. Aim for uniform sizes to ensure even cooking.

Place the cut potato strips in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which will help them become crispier when fried.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels or a clean kitchen towel. Removing moisture is key to achieving crispy fries.

Heat the Oil
In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature. Be careful not to overfill the pot to avoid oil spills.

Fry the Potatoes (First Fry)
Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 5-6 minutes, or until they are pale and soft. Do not overcrowd the pot; fry in batches if necessary. Remove and drain on paper towels.
