Dough for Calzone or Stromboli

Method

Prepare Dough

  1. 1

    Activate Yeast

In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it stand for about 5-10 minutes until frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

  3. 3

    Knead the Dough

Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

  4. 4

    Let Dough Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Filling

  1. 5

    Prepare Extra Toppings

While the dough is rising, prepare your extra toppings by chopping and measuring the ingredients: mozzarella cheese, pepperoni, bell peppers, mushrooms, spinach, feta cheese, olives, Italian seasoning, and Parmesan cheese.

Assemble Calzone or Stromboli

  1. 6

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 7

    Roll Out Dough

Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a large circle or rectangle on a floured surface.

  3. 8

    Add Toppings

On one half of the dough, layer the mozzarella cheese, pepperoni, bell peppers, mushrooms, spinach, feta cheese, olives, and sprinkle with Italian seasoning.

  4. 9

    Seal the Dough

Fold the other half of the dough over the toppings and pinch the edges to seal tightly. Cut a few slits on top for steam to escape.

  5. 10

    Bake

Transfer the calzone or stromboli to a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.

  6. 11

    Serve

Remove from the oven, let cool for a few minutes, then slice and serve with marinara sauce on the side.
