Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, or use non-stick spray.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  3. 3

    Mix Sugar, Eggs, and Vanilla

In a separate bowl, whisk together granulated sugar, large eggs, large egg yolk, and vanilla extract until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir gently until fully combined.

  5. 5

    Add Flour and Salt

Sift in the all-purpose flour and add a pinch of salt. Fold the mixture gently until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

Serving

  1. 8

    Cool and Serve

Allow the cakes to cool for 1 minute. Run a knife around the edges of each cake, then carefully invert them onto individual plates. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream, if desired.
