Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Bake the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from the oven and let it cool slightly.
Filling

Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the granulated sugar and mix until well combined.

Add remaining ingredients
Add the sour cream, vanilla extract, and eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

Pour the filling
Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

After cooling, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight.

Prepare the strawberry topping
In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries evenly.

Serve
Once the cheesecake is fully chilled, remove it from the springform pan. Top with the strawberry mixture just before serving.
