Prepare the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes, until softened.

Add the black beans, cumin, chili powder, salt, black pepper, and garlic powder to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until heated through.

Remove the skillet from heat and set aside.
Assembling Quesadillas

Build the Quesadillas
Heat a clean skillet over medium heat. Place one tortilla in the skillet, and sprinkle 1/4 cup of shredded cheese over half of the tortilla.

Spoon some of the black bean mixture over the cheese, then fold the tortilla in half to cover the filling.

Cook for about 2-3 minutes on one side, or until the cheese is melted and the tortilla is golden brown.

Carefully flip the quesadilla and cook for another 2-3 minutes on the other side until golden brown and crispy.

Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges. Serve with sour cream, salsa, and sliced avocado on the side, as desired.
