Make the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut the cold unsalted butter into small pieces and mix into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough holds together without being sticky. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Peel, core, and slice the apples into thin wedges. In a large bowl, toss the apple slices with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, cornstarch, and vanilla extract until well coated.
