Pork Poppers

Method

Preparing the Pork Poppers

  1. 1

    Prepare the Jalapeños

Cut the jalapeños in half lengthwise and remove the seeds and membranes to reduce heat.

  2. 2

    Stuff the Jalapeños

Cut the provolone cheese into small pieces and fill each jalapeño half with the cheese.

  3. 3

    Prepare the Pork

Cut the pork tenderloin into 8 equal pieces. Season each piece with smoked paprika, garlic powder, onion powder, salt, and black pepper.

  4. 4

    Wrap the Jalapeños

Take a stuffed jalapeño and wrap it with a slice of bacon. Secure with a toothpick if needed.

  5. 5

    Wrap with Pork

Take a seasoned piece of pork and wrap it around the bacon-wrapped jalapeño, ensuring the jalapeño is fully encased. Secure with a toothpick.

Cooking the Poppers

  1. 6

    Preheat the Smoker

Preheat your smoker to 225°F (107°C).

  2. 7

    Smoke the Poppers

Place the wrapped poppers in the smoker and cook for about 2 to 3 hours, or until the bacon is crispy and the pork is cooked through.

  3. 8

    Rest the Poppers

Once cooked, remove the poppers from the smoker and let them rest for about 10 minutes before serving.

Preparing the Chipotle Ranch Dressing

  1. 9

    Mix the Ingredients

In a bowl, combine mayonnaise, sour cream, and buttermilk. Whisk until smooth.

  2. 10

    Add Flavor

Stir in the chipotle in adobo sauce, lime juice, dried dill, garlic powder, salt, and black pepper.

  3. 11

    Chill the Dressing

Cover the dressing and refrigerate for at least 30 minutes to allow flavors to meld.
