Prepare the Beans

    Rinse and Soak

    Rinse the pinto beans under cold water. Place them in a large pot and cover with 4 cups of water. Soak the beans overnight or for at least 8 hours.

    Cook the Beans

    After soaking, drain the beans and return them to the pot. Add 4 cups of fresh water and 1 tsp of salt. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours until beans are tender.

Cook the Vegetables

    Cook the Bacon

    In a large skillet over medium heat, cook 4 slices of bacon until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the skillet.

    Sauté Onion and Garlic

    In the same skillet, add 1 medium chopped onion and sauté until translucent, about 5 minutes. Add 3 minced garlic cloves and sauté for another minute until fragrant.

    Add Tomato and Spices

    Chop 2 medium tomatoes and 1 medium jalapeño pepper (seeds removed for less heat) and add them to the skillet. Stir in 1 tsp cumin, 0.5 tsp black pepper, and 1 tsp chili powder. Cook for an additional 5 minutes.

Combine Everything

    Mix with Beans

    Add the cooked vegetable mixture to the pot of beans. Crumble the reserved bacon and add it back to the pot as well. Stir everything together and simmer for an additional 10-15 minutes to combine flavors.

    Finish with Cilantro

    Remove the pot from heat and stir in 0.5 cups of chopped cilantro. Adjust seasoning with salt and pepper to taste.
