Cook the Pork Shoulder
In a slow cooker, add the pork shoulder and season with salt and pepper. Cook on low for 8 hours or on high for 4 hours until it shreds easily.

Chop the Meats
Once the brisket and pork are cooked, remove from their respective cooking methods and let them cool slightly. Chop the brisket and shred the pork into bite-sized pieces.

Mix the Sauce Ingredients
In a medium saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, Worcestershire sauce, liquid smoke, salt, and black pepper. Stir well.

Simmer the Sauce
Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally, until slightly thickened.
Combine and Serve

Mix Meats with Sauce
In a large bowl, combine the chopped brisket and shredded pork. Pour the BBQ sauce over the meat and stir until fully coated.

Prepare the Buns
Slice the buns in half and lightly toast them if desired.

Assemble the Smokey Joe
Spoon the BBQ meat mixture onto the bottom half of each bun. Top with coleslaw and close with the top half of the bun. Serve immediately.
