Brine the Chicken
In a bowl, submerge the chicken breasts in pickle brine. Let them marinate for at least 2 hours or overnight in the refrigerator for maximum flavor.

Prepare the Flour Mixture
In another bowl, mix together the all-purpose flour, paprika, garlic powder, onion powder, salt, and black pepper until well combined.

Dredge the Chicken
Remove the chicken breasts from the pickle brine and let the excess liquid drip off. Dredge each chicken breast in the seasoned flour mixture, ensuring they are fully coated. Shake off any excess flour.

Fry the Chicken
In a large frying pan, heat vegetable oil over medium heat. Once hot, carefully add the dredged chicken breasts. Fry for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove from oil and place on paper towels to drain excess oil.

Toast the Buns
Lightly toast the burger buns on a skillet or in a toaster until golden brown.

Assemble the Sandwich
Spread 2 tablespoons of BBQ mayo on the bottom half of each bun. Place a fried chicken breast on top, followed by pickles and shredded lettuce. Drizzle 2 tablespoons of Joe’s BBQ sauce over the toppings. Finally, place the top half of the bun to complete the sandwich.

Serve the fried chicken sandwiches immediately while hot, with additional pickles and BBQ sauce on the side if desired.
