Pulled Chicken

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Season chicken thighs with salt and black pepper. Add chicken to the skillet and cook for about 5-7 minutes on each side until browned.

    Shred the Chicken

    Once cooked, remove chicken from the skillet and let it rest for a few minutes. Use two forks to shred the chicken into bite-sized pieces.

    Combine with BBQ Sauce

    Return shredded chicken to the skillet. Pour in the BBQ sauce, stir to combine, and let it simmer over low heat for about 10 minutes.

BBQ Mayo

    Prepare the BBQ Mayo

    In a small bowl, mix together mayonnaise and BBQ sauce until well combined. Set aside.

Onion Rings

    Prepare the Onion

    Slice the onion into 1/2 inch thick rings and separate the rings from each other.

    Make the Batter

    In one bowl, mix flour and salt. In another bowl, whisk eggs and milk together. In a third bowl, combine cornmeal and a pinch of salt.

    Coat the Onion Rings

    Dip each onion ring first in the flour mixture, then in the egg mixture, and finally coat in cornmeal.

    Fry the Onion Rings

    In a large pot, heat vegetable oil over medium-high heat. Fry the coated onion rings in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Assemble

    Build the Sandwich

    On a toasted bun, layer pulled chicken, a slice of smoked provolone, and top with onion rings and BBQ mayo. Drizzle with Joe's BBQ sauce before serving.
