Method

Prepare the Pork Shoulder

    Season the Pork

    Rub the pork shoulder with yellow mustard evenly over all sides. Then, apply the pork rub generously over the mustard-coated pork, ensuring it's well covered.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Prepare your smoker according to the manufacturer's instructions and preheat it to 225°F (107°C).

    Smoke the Pork

    Once the smoker is ready, add the soaked wood chips. Place the pork shoulder in the smoker and smoke for about 1.5 hours per pound, until the internal temperature reaches 195°F (90°C). This will take approximately 8-10 hours.

    Rest the Pork

    Once cooked, remove the pork shoulder from the smoker and wrap it in foil. Let it rest for at least 30 minutes before shredding.

Make Bubba’s Carolina Sauce

    Combine the Ingredients

    In a saucepan, combine apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, hot sauce, salt, and black pepper. Bring the mixture to a boil over medium heat.

    Simmer the Sauce

    Once boiled, reduce the heat and let the sauce simmer for about 15-20 minutes until slightly thickened. Remove from heat and let cool.

Prepare Spicy Cole Slaw

    Mix the Slaw Ingredients

    In a large mixing bowl, combine shredded green cabbage and grated carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, hot sauce, salt, and black pepper.

    Combine Slaw and Dressing

    Pour the dressing over the cabbage and carrots. Toss until everything is well coated. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

    Shred the Pork

    After resting, shred the pork shoulder using two forks or your hands. Discard any large pieces of fat.

    Assemble the Sandwiches

    Serve the shredded pork on a bun, topped with Bubba’s Carolina sauce and a generous helping of spicy cole slaw.
