Chipotle Mashed Potatoes

    Prepare the Potatoes

    Peel and cube the russet potatoes. Place them in a large pot and cover with cold water. Add a pinch of salt.

    Boil the Potatoes

    Bring the water to a boil over medium-high heat. Cook the potatoes until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, chipotle peppers, salt, and black pepper. Mash until smooth and creamy.

Burnt Ends

    Prepare the Brisket

    Preheat your smoker or oven to 225°F (107°C). Season the cubed brisket with salt, black pepper, garlic powder, and onion powder.

    Cook the Brisket

    Place the brisket cubes in the smoker or oven for about 4-5 hours, until they are tender and have developed a nice bark.

    Glaze the Burnt Ends

    Toss the cooked brisket with BBQ sauce and brown sugar. Return to the heat for another 1 hour to caramelize.

Taquito Assembly

    Assemble the Taquitos

    Spread a layer of chipotle mashed potatoes followed by burnt ends in the center of each tortilla. Roll them tightly and secure with a toothpick if necessary.

    Heat oil in a deep pan over medium heat. Fry the taquitos until golden brown and crispy, about 3-4 minutes on each side.

Chipotle Ranch
