Prepare the Brisket
Preheat your smoker or oven to 225°F (107°C). Season the cubed brisket with salt, black pepper, garlic powder, and onion powder.

Cook the Brisket
Place the brisket cubes in the smoker or oven for about 4-5 hours, until they are tender and have developed a nice bark.

Glaze the Burnt Ends
Toss the cooked brisket with BBQ sauce and brown sugar. Return to the heat for another 1 hour to caramelize.

Assemble the Taquitos
Spread a layer of chipotle mashed potatoes followed by burnt ends in the center of each tortilla. Roll them tightly and secure with a toothpick if necessary.

Fry the Taquitos
Heat oil in a deep pan over medium heat. Fry the taquitos until golden brown and crispy, about 3-4 minutes on each side.

In a small bowl, combine ranch dressing with chipotle peppers. Mix well until fully incorporated.
