Cook the Pasta
Bring a large pot of salted water to a boil. Add the gramigna pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Lamb Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
Brown the Lamb
Increase the heat to medium-high and add the ground lamb. Cook until browned and cooked through, breaking it apart with a spoon.
Add Wine and Tomatoes
Pour in the red wine and let it simmer for about 3-4 minutes. Add the canned crushed tomatoes, oregano, salt, and pepper. Stir well to combine.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally until thickened.
Combine Pasta and Sauce
Add the drained gramigna pasta to the sauce and toss to combine thoroughly. Cook for an additional 2-3 minutes to heat through.
Serve
Serve the gramigna topped with fresh basil and grated Parmesan cheese to taste.
