Prepare the Syrup
In a saucepan, combine water, brown sugar, juniper berries, cinnamon stick, star anise, cloves, and lemon zest. Bring to a simmer over medium heat, stirring until the sugar dissolves. Once boiling, reduce heat and let it simmer for 10 minutes to infuse the flavors.

Prepare the Chinotto Oranges
While the syrup is simmering, wash the chinotto oranges thoroughly. Cut them in half and remove any seeds.

Roast the Oranges
Preheat the wood oven to a medium-high heat. Lightly brush the cut sides of the chinotto oranges with olive oil and sprinkle with salt. Place the oranges cut side down on a baking sheet.

Bake the Oranges
Place the baking sheet in the wood oven and roast for about 10-15 minutes, or until the oranges are slightly charred and caramelized.

Serve
Remove the oranges from the oven and drizzle with the infused syrup. Serve warm as a delightful citrus dessert.
