    Prepare the Potatoes

    Wash the fresh NC potatoes thoroughly and cut them into wedges.

    Smoke the Potatoes

    Preheat your smoker to 225°F (107°C). Place the potato wedges in the smoker for about 45 minutes, until they are tender and infused with smoky flavor.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully fry the smoked potato wedges in batches until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Prepare the Toppings

    In a small bowl, mix the Salsa Poblano, and set aside. Crumble the Cotija cheese and chop the cilantro.

    Assemble the Dish

    On a serving platter, arrange the fried potatoes. Drizzle with Mexican crema, then add the Salsa Poblano, crumbled Cotija cheese, and sprinkle with cilantro. Drizzle with chili oil and season with salt and black pepper to taste.
