Cooking Instructions

  1. 1

    Prepare the Clams

Rinse the clams under cold water to remove any sand or grit. Place them in a large pot with white wine and simmer until they open. Discard any clams that do not open.

  2. 2

    Sauté the Vegetables

In another large pot, melt the butter over medium heat. Add diced onions, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender.

  3. 3

    Add Garlic

Add minced garlic to the vegetable mixture and sauté for an additional minute until fragrant.

  4. 4

    Combine Broth and Clams

Pour in the vegetable broth and bring the mixture to a boil. Add the opened clams and their juices to the pot.

  5. 5

    Add Cream and Season

Stir in the heavy cream, Parmesan cheese, salt, and black pepper. Reduce heat and simmer for about 10 minutes, allowing the flavors to meld.

  6. 6

    Serve

Ladle the chowder into bowls and top with chopped chives and garlic croutons. Enjoy!
