Preparation Instructions

  1. 1

    Prepare the Croutons

Preheat your oven to 375°F (190°C). Cut the bread into cubes and toss them with olive oil, minced garlic, salt, and pepper. Spread them on a baking sheet in a single layer and bake for 10-15 minutes until golden and crispy.

  2. 2

    Char the Romaine

Cut the romaine heads in half lengthwise. Drizzle with olive oil and season with salt and pepper. Heat a grill or grill pan over medium-high heat. Place the romaine cut-side down on the grill and cook for 2-3 minutes until charred. Flip and grill for another 1-2 minutes.

  3. 3

    Prepare the Dressing

In a blender, combine a small handful of Parmesan cheese, a clove of garlic, salt, pepper, and a splash of olive oil. Blend until smooth, adjusting the oil and seasoning to taste.

  4. 4

    Assemble the Salad

Place the charred romaine on a serving platter. Drizzle with the dressing, top with additional Parmesan cheese, sliced radishes, and the homemade croutons. Serve immediately.
