Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl.

    Heat the Cream

    In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.

    Combine Chocolate and Cream

    Pour the hot cream over the chopped chocolate. Let it sit for 2-3 minutes to melt the chocolate.

    Stir Until Smooth

    Using a spatula, gently stir the mixture until the chocolate is fully melted and the ganache is smooth.

    Add Butter and Flavoring

    Add the unsalted butter, vanilla extract, and a pinch of sea salt to the ganache. Stir until the butter is fully melted and incorporated.

Chilling

    Pour into Molds

    Pour the ganache into silicone molds or a small baking dish lined with parchment paper.

    Chill in the Refrigerator

    Place the molds in the refrigerator and let the ganache chill for at least 2 hours until firm.

Serving

    Remove from Molds

    Once set, carefully remove the ganache from the molds.

    Top each piece with crushed nuts, fresh berries, or a dollop of whipped cream if desired.
