Cake Base

Chocolate Ganache

Method

Cake Base

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

  4. 4

    Mix Together

Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until well combined. Carefully stir in the boiling water until the batter is smooth and thin.

  5. 5

    Bake the Cake

Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cakes

Remove from the oven and allow the cakes to cool in the pans for about 10 minutes. Then transfer to wire racks to cool completely.

Chocolate Ganache

  1. 7

    Heat the Cream

In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.

  2. 8

    Melt the Chocolate

Remove the saucepan from heat and add the semi-sweet chocolate chips. Stir gently until the chocolate is completely melted and the mixture is smooth.

  3. 9

    Cool the Ganache

Let the ganache cool at room temperature until it thickens slightly, about 30 minutes.

Assembly and Garnish

  1. 10

    Assemble the Cake

Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of ganache over the top, then place the second cake layer on top.

  2. 11

    Frost the Cake

Pour the remaining ganache over the top of the cake, allowing it to drip down the sides for a beautiful finish.

  3. 12

    Garnish

Sprinkle chocolate shavings over the top of the cake and arrange fresh raspberries around the base for a decorative touch.
