Marinated Pork Preparation

    Marinate the Pork

    In a bowl, combine the sliced pork with fish sauce, sugar, minced garlic, minced shallots, black pepper, and vegetable oil. Mix well to ensure the pork is evenly coated. Cover and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum flavor.

Cooking Noodles & Pork

    Cook the Noodles

    Bring a pot of water to a boil. Add the rice vermicelli noodles and cook according to package instructions, usually 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

    Grill the Pork

    Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated pork slices on the grill. Cook for about 3-4 minutes on each side or until cooked through and slightly charred. Remove from grill and let rest for a few minutes before slicing into bite-sized pieces.

Dipping Sauce Preparation

    Make the Dipping Sauce

    In a small bowl, whisk together fish sauce, water, sugar, minced garlic, and sliced chili. Adjust the sweetness and heat to taste. Set aside for serving.

Assembly

    Assemble the Dish

    In a serving bowl, place a portion of rice vermicelli noodles. Top with grilled pork, fresh herbs, lettuce leaves, and julienned cucumber. Serve with the dipping sauce on the side.
