Prepare the Sweet Corn
Boil the sweet corn in salted water for about 5-7 minutes until tender. Remove from water, let cool, and then cut the kernels off the cob.

Sauté the Leeks
In a large skillet, heat olive oil over medium heat. Add the sliced leeks and a pinch of salt. Sauté until the leeks are softened and translucent, about 5-7 minutes.

Combine Ingredients
Add the sweet corn kernels and diced heirloom tomatoes to the skillet with the leeks. Stir gently to combine and cook for another 2-3 minutes until heated through.

Serve
Plate the corn and leek mixture. Crumble goat cheese over the top, add pickled jalapenos to taste, and garnish with fresh basil. Serve warm.
