    Prepare the Pork Shank

    Season the pork shanks with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the pork shanks until browned on all sides. Remove and set aside.

    Sauté Mirepoix

    In the same pot, add carrots, celery, onion, and garlic. Sauté for about 5-7 minutes until softened.

    Add Liquid and Herbs

    Stir in the Dijon mustard, thyme, and pour in the chicken broth. Bring to a simmer.

    Braised Pork Shank

    Return the pork shanks to the pot. Cover and simmer on low heat for 2-3 hours, or until the meat is fork-tender.

    Cook Lentils

    In a separate pot, cook lentils according to package instructions. Drain and set aside.

    Prepare Butternut Squash Puree

    Steam or boil butternut squash until tender. Blend with salt, pepper, and a splash of olive oil until smooth.

    Make Horseradish & Apple Salad

    Julienne the apple and mix with horseradish and apple cider vinegar. Season with salt and pepper.

    Serve the braised pork shank over the mustard lentils, alongside butternut squash puree and top with the horseradish and apple salad.
