    Prepare Bone Marrow

    Preheat your oven to 400°F (200°C). Rinse the bone marrow bones under cold water and pat them dry. Place the bones on a baking sheet.

    Season and Apply Miso

    In a small bowl, mix the miso paste with olive oil, salt, and pepper. Generously spread this mixture onto the exposed marrow of each bone.

    Roast the Bones

    Roast the prepared bones in the preheated oven for about 20-25 minutes, or until the marrow is bubbling and slightly golden.

    Prepare Tamari Syrup

    In a small saucepan over medium heat, combine tamari sauce, honey, and a pinch of salt. Stir and simmer for 3-5 minutes until slightly thickened.

    Prepare Garnishes

    While the marrow is roasting, chop the green onions finely. Set aside. If needed, chop the pickled peanuts for easier serving.

    Assemble the Dish

    Once the marrow is roasted, remove it from the oven. Drizzle the tamari syrup over the bones. Top with chopped green onions and pickled peanuts. Serve with puffed rice on the side.
