    Brine the Raspberries

    In a small saucepan, combine Prosecco, water, and sugar. Bring to a gentle simmer until the sugar is dissolved. Remove from heat and let cool slightly. Pour the brine over the fresh raspberries in a bowl and let them sit for at least 30 minutes.

    Pickle the Shallots

    Thinly slice the shallots and place them in a jar. In a separate bowl, combine white vinegar, water, salt, and black peppercorns. Pour this mixture over the shallots, seal the jar, and refrigerate for at least 1 hour.

    Prepare the Oysters

    Carefully shuck the Harkers Island oysters and place them on a serving platter with ice to keep them cold.

    Assemble the Dish

    Top each oyster with a few brined raspberries, a few sorrel leaves, and a small amount of pickled shallots. Serve immediately.
