Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until well combined and press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing until well incorporated. Add the sour cream and vanilla extract, mixing until smooth. Finally, add the eggs one at a time, mixing just until blended.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.

Chill the Cheesecake
Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.
