Prepare the crust

Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

Make the filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing until well combined. Add sour cream and vanilla extract, and mix until smooth. Add eggs one at a time, mixing on low speed until just combined.

Bake the cheesecake

Pour the cream cheese filling over the crust in the springform pan. Bake for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and refrigerate

Remove the cheesecake from the oven and let it cool at room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.

Prepare the brulee bananas and strawberries

Slice bananas and strawberries. In a skillet, add a bit of sugar and heat until melted. Add banana slices and cook until caramelized. Set aside.

Serve

Once the cheesecake is chilled, slice and serve topped with bruleed bananas, fresh strawberries, and shaved chocolate.
