Butter Poached Lobster Tail

Preparation

Prepare the Lobster
Start by bringing a pot of water to a boil. Add the lobster tails and cook for 1-2 minutes to par-cook them. Remove and set aside.

Butter Poaching
In a saucepan, melt the unsalted butter over low heat. Add minced garlic and salt. Once melted, add the par-cooked lobster tails and poach them for about 8-10 minutes, or until fully cooked and tender.

Fancy Tater Tots
Cook frozen tater tots according to package instructions until golden and crispy. Set aside.

Grilled White Asparagus
Trim the ends of the white asparagus and grill them over medium heat until tender and slightly charred, about 5-7 minutes.

Plating
On a plate, place a bed of fancy tater tots, top with the butter poached lobster tail. Garnish with grilled white asparagus, a dollop of caviar, and a squeeze of Meyer lemon juice.
