Soup Preparation

    Prepare the Black-Eyed Peas

    If using dried black-eyed peas, soak them overnight and drain. If using canned, rinse and set aside.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

    Add Garlic and Spices

    Add the minced garlic, salt, black pepper, red pepper flakes, and bay leaf to the pot. Cook for another 1-2 minutes until fragrant.

    Combine Ingredients

    Add the soaked or canned black-eyed peas and the broth to the pot. Stir well to combine.

    Simmer the Soup

    Bring the soup to a boil, then reduce heat to low and let it simmer for about 30-40 minutes, or until the peas are tender.

    Add Collard Greens

    Stir in the chopped collard greens and continue to simmer for an additional 10-15 minutes until the greens are tender.
