    Prepare the Beef Tartare

    Finely chop the beef tenderloin and place it in a mixing bowl. Add the capers, shallot, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix well to combine all the ingredients.

    Cure the Egg Yolks

    To prepare the cured egg yolks, gently place the yolks in a bowl of salt and sugar mixture (50/50) for about 4 hours. Rinse gently and let dry.

    Toast the Bread

    Grill the slices of bread until golden brown and crispy. Drizzle with Georgia olive oil while still warm.

    Assemble the Dish

    On a serving plate, place the beef tartare mixture in the center. Garnish with the cured egg yolk on top and arrange the crudo pickles around it. Serve with the grilled bread on the side.
