Steak and Mushrooms

Method

Preparation

  1. 1

    Prepare the Steak and Mushrooms

In a skillet, heat olive oil over medium-high heat. Season the steak tips with salt and pepper. Sear the steak tips until browned, about 3-4 minutes, then remove from skillet. In the same skillet, add the sliced mushrooms and sauté until golden brown, about 5 minutes. Set aside.

  2. 2

    Make the Fondue

In a saucepan over medium heat, combine the heavy cream, white wine, and minced garlic. Slowly whisk in the cream cheese until smooth. Stir in the bleu cheese and cherry peppers until melted and well combined. In a small bowl, mix cornstarch with a tablespoon of water to make a slurry, then add to the fondue to thicken, cooking for an additional 2-3 minutes.

  3. 3

    Toast the Brioche

Preheat your oven to 375°F (190°C). Brush the brioche slices with melted butter and place them on a baking sheet. Toast in the oven for 8-10 minutes, or until golden brown.

  4. 4

    Serve

Arrange the sautéed mushrooms and steak tips on a platter. Serve the cherry pepper-bleu cheese fondue in a fondue pot with the toasted brioche for dipping.
