Dragon Roll Preparation

Prepare the Shrimp
In a small bowl, toss the peeled and deveined shrimp with togarashi seasoning and set aside.

Cook Shrimp
Heat a small amount of oil in a pan over medium heat. Cook the seasoned shrimp until they are pink and opaque, about 2-3 minutes per side. Remove from heat and let cool.

Prepare the Sushi Rice
Spread a thin layer of sushi rice over a nori sheet, leaving about 1 inch from the top. Press the rice down gently.

Roll the Sushi
Using a bamboo sushi mat, carefully roll the sushi away from you, pressing gently to keep it tight. Wet the edge of the nori with a little water to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 8 pieces. Wipe the knife with a damp cloth after each cut for cleaner slices.

Serve with Toppings
Drizzle kabayaki sauce over the roll and garnish with tempura crisps, sriracha, and toasted sesame seeds before serving.
