Cooking Instructions
- 1
Prepare the Clams
Preheat your oven to 375°F (190°C). Clean the clams under cold water and steam them in a large pot until they open, about 5-7 minutes. Discard any that remain closed. Remove the clams from their shells and chop the clam meat finely. Reserve half of the shells for stuffing.
- 2
Cook the Bacon
In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet, chop finely, and set aside. Reserve a tablespoon of bacon grease in the skillet.
- 3
Prepare the Filling
In the same skillet, add chopped red bell pepper and minced garlic to the reserved bacon grease. Sauté until the pepper is soft, about 3-4 minutes. In a mixing bowl, combine chopped clams, cooked bacon, sautéed peppers, breadcrumbs, parmesan cheese, melted butter, lemon juice, fresh parsley, salt, and black pepper. Mix until well combined.
- 4
Stuff the Clams
Fill each reserved clam shell with the filling mixture, packing it down slightly. Place the stuffed clams on a baking sheet.
- 5
Bake the Clams
Bake the stuffed clams in the preheated oven for 15-20 minutes, or until the tops are golden brown.
- 6
Serve
Remove from the oven and let cool slightly before serving. Enjoy your Clams Casino warm!
