    Make the Gnocchi

    In a large bowl, mix the flour and grated Parmesan. Create a well in the center and add the eggs. Mix until a dough forms, then knead gently until smooth. Roll into small logs and cut into bite-sized pieces.

    Cook the Gnocchi

    Boil a large pot of salted water. Drop the gnocchi in batches; they are done when they float to the surface. Remove with a slotted spoon and set aside.

    Prepare the Chicken

    Season the chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and let rest, then slice.

    Make the Sage Butter

    In the same pan, melt the butter and add the fresh sage leaves. Cook until the butter is golden and the sage is crispy.

    Prepare the Watercress Salad

    Toss the watercress with a drizzle of olive oil, salt, and pepper.

    Blend the preserved lemon with a little water until smooth. Strain if desired to remove pulp.

    On a plate, lay down the sliced chicken, top with gnocchi, drizzle with sage butter, and serve with the watercress salad and preserved lemon gel on the side.
