Method

Meatloaf Preparation

    Prepare the Meatloaf

    Preheat the oven to 350°F (175°C). In a large bowl, combine ground bison, breadcrumbs, eggs, milk, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and thyme. Mix until well combined.

    Shape and Bake

    Transfer the mixture to a loaf pan and shape it into a loaf. Bake in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 160°F (70°C).

Bourbon Shallot Demi-Glace Preparation

    Cook Shallots

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add minced shallots and sauté until translucent, about 5 minutes.

    Add Bourbon and Stock

    Pour in bourbon and simmer for a few minutes to reduce. Add beef stock, salt, and pepper, and let it simmer until thickened, about 15-20 minutes.

Tobacco Road Onions Preparation

    Prepare the Onions

    Heat oil in a deep fryer or heavy pot over medium-high heat. In a bowl, mix flour, cornmeal, salt, and pepper. Dredge the sliced onions in the mixture.

    Fry the Onions

    Fry the onions in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels.

Crispy Smashed Yukon Potatoes Preparation

    Boil and Smash

    Boil the Yukon Gold potatoes until tender. Drain and let cool slightly. Smash each potato with a fork or the bottom of a glass.

    Bake the Potatoes

    Drizzle with olive oil, season with salt and pepper, and bake in the oven at 425°F (220°C) for about 20-25 minutes until crispy.

Garlic Butter Crostini Preparation

    Prepare the Crostini

    In a small bowl, mix softened butter, minced garlic, and chopped parsley. Spread the mixture on baguette slices.

    Toast the Crostini

    Place the slices on a baking sheet and toast in the oven at 400°F (200°C) for about 10-12 minutes until golden.
