Collect Turkey Drippings
After roasting the turkey, pour the drippings from the roasting pan into a measuring cup. Allow the drippings to sit for a few minutes so the fat can rise to the top.

Separate Fat from Drippings
Skim off the fat from the top of the drippings using a spoon or a fat separator. You should have about 2 cups of turkey drippings left.
Cooking the Gravy

Make a Roux
In a large saucepan over medium heat, add the fat collected from the drippings. Add 1 cup of all-purpose flour to the pan and whisk continuously until it forms a smooth paste, known as a roux. Cook for about 2-3 minutes until the roux is golden brown.

Add Turkey Drippings and Broth
Gradually whisk in the 2 cups of turkey drippings followed by 2 cups of chicken broth. Continue whisking to prevent lumps from forming.

Season the Gravy
Add salt, black pepper, onion powder, garlic powder, and dried thyme to the mixture. Stir well and bring to a simmer.

Allow the gravy to simmer for about 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.
