Method
Preparation
- 1
Marinate the Chicken
Place the chicken thighs in a large bowl and cover them with buttermilk. Ensure all pieces are submerged. Cover and refrigerate for at least 4 hours, preferably overnight.
- 2
Prepare the Coating
In a separate bowl, mix together the cornmeal, all-purpose flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper until well combined.
Cooking
- 3
Heat the Oil
In a large, heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Coat the Chicken
Remove the chicken pieces from the buttermilk, allowing excess to drip off. Dredge each piece in the cornmeal mixture, making sure to coat thoroughly. Shake off any excess coating.
- 5
Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, working in batches if necessary. Fry for 10-12 minutes on each side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
- 6
Drain and Rest
Once cooked, transfer the chicken to a wire rack set over a baking sheet to drain excess oil. Let the chicken rest for 5 minutes before serving.
