Oxtail Preparation

    Sear the Oxtail

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the oxtail pieces, browning them on all sides for about 10 minutes. Remove the oxtail and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, diced carrots, and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Deglaze and Add Liquid

    Pour in the red wine to deglaze the pot, scraping up any browned bits. Let it cook for 2-3 minutes. Then, add the beef broth, bay leaves, thyme, salt, and black pepper.

    Simmer the Oxtail

    Return the oxtail to the pot. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 3 to 4 hours, until the meat is tender.

    Preheat Oven

    Preheat your oven to 400°F (200°C). Grease an 8-inch square baking dish.

    Combine Dry Ingredients

    In a large bowl, mix together cornmeal, all-purpose flour, baking powder, sugar, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together milk, egg, and melted butter. Make sure the butter isn’t too hot.

    Combine and Bake

    Pour the wet ingredients into the dry mixture and stir until just combined. Pour the batter into the prepared baking dish and bake for 20-25 minutes, until golden brown.
