Prepare the Catfish
In a large bowl, pour the buttermilk over the catfish fillets and let them marinate for at least 30 minutes to tenderize and flavor the fish.

Set Up the Breading Station
In a shallow dish, combine the cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well to ensure the seasoning is evenly distributed.

Bread the Catfish
Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, pressing lightly to coat thoroughly. Place breaded fillets on a plate.

In a large, heavy skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
