Catfish Preparation

    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Marinate the Catfish

    In a bowl, pour the buttermilk over the catfish fillets and let them marinate for at least 30 minutes in the refrigerator.

    Prepare the Coating

    In a separate bowl, mix together the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper.

    Coat the Catfish

    Remove the catfish from the buttermilk and dredge each fillet in the cornmeal mixture, ensuring they are well coated.

    Fry the Catfish

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the coated catfish fillets for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

    Preheat your oven to 425°F (220°C).

    Pour the batter into a greased 8-inch square baking dish or cast-iron skillet. Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
