Prepare the Mixture

In a large mixing bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, breadcrumbs, beaten egg, salt, and black pepper. Gently fold the ingredients together until just combined, being careful not to break up the crab meat too much.

Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes. This helps the flavors meld and allows the mixture to firm up, making it easier to form cakes.

Form the Cakes

Once chilled, remove the crab mixture from the refrigerator. Using your hands, form the mixture into patties, about 2 inches in diameter and 1 inch thick. Place the formed cakes on a parchment-lined baking sheet.

Heat the Oil

In a large skillet, heat vegetable oil over medium heat. You will need enough oil to cover the bottom of the skillet, about 1/4 inch deep.

Fry the Cakes

Carefully place the crab cakes in the hot oil. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy. Make sure not to overcrowd the skillet; fry in batches if necessary.

Drain and Serve

Once cooked, transfer the crab cakes to a plate lined with paper towels to drain any excess oil. Serve warm with your favorite dipping sauce.
