Method

Cheesecake Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

  2. 2

    Bake the crust

Bake the crust in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from oven and let cool while preparing the filling.

  3. 3

    Make the filling

In a large bowl, combine ricotta cheese, cream cheese, sugar, vanilla extract, and citrus zest (orange and lemon). Beat until smooth and creamy.

  4. 4

    Add eggs

Add eggs one at a time, mixing well after each addition. Be careful not to overmix.

  5. 5

    Pour filling into crust

Pour the ricotta mixture over the cooled crust in the springform pan.

  6. 6

    Bake the cheesecake

Bake in the oven at 325°F (160°C) for about 45-50 minutes or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool inside for about 1 hour.

  7. 7

    Chill

After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight, to set completely.

  8. 8

    Serve

Remove the cheesecake from the springform pan. Slice and serve chilled, optionally garnished with fresh citrus slices or a dusting of powdered sugar.
