Prepare the Melons
Cut the watermelon and cantaloupe into bite-sized cubes. Place them in a mixing bowl.

Compress the Melon
Using a vacuum sealer, compress the melon cubes for about 20 minutes to enhance their flavor and texture. If you don't have a vacuum sealer, you can place the melon in a resealable plastic bag, remove as much air as possible, and refrigerate for the same amount of time.

Make the Mint Oil
In a blender, combine the fresh mint leaves, olive oil, lemon juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Assemble the Dish
Remove the compressed melon from the vacuum sealer or bag. Arrange the melon cubes on a serving plate. Top with slices of prosciutto and drizzle with the mint oil.

Serve immediately as a refreshing appetizer or side dish.
